- Wash all fruit thoroughly and dry it completely. Any moisture will prevent the candy coating from sticking.
- Thread the fruit onto bamboo skewers in your favorite pattern, leaving enough space to hold the skewer.
- Fill a large bowl with ice water and set it beside the stove.
- In a medium saucepan, combine the sugar and water. Do not stir after the sugar dissolves.
- Bring to a boil over medium-high heat and cook until the syrup reaches 300°F (149°C) (hard crack stage), about 10–15 minutes.
- To test without a thermometer, drip a small amount of syrup into the ice water. It should harden immediately and snap cleanly when broken.
- Working quickly, tilt the pan and dip each fruit skewer into the syrup, rotating to coat the fruit with a thin, even layer.
- Immediately dip the coated skewer into the ice water for 2–3 seconds to harden the candy shell.
- Place on parchment paper or a silicone baking mat until ready to serve.
- Enjoy immediately for the best crisp, glass-like candy coating.
