Ingredients

6 Cups Peach - Peeled or Sliced
1/3 Cup Brown Sugar (or Maple Syrup)
2 Tbsp Fine Granulated Sugar
2 Tbsp Cornstarch
1 Tsp Cinnamon
1/4 Tsp Nutmeg
1 Tsp Vanilla
1 Tbsp Lemon Juice - Fresh Squeezed
1 Pinch Salt
1 Cup Rolled Oats
3/4 Cup All-Purpose Flour
1/2 Cup Brown Sugar
1/2 Tsp Cinnamon
1/4 Tsp Salt
1/2 Cup Butter - Cubed

Directions

Preheat your outdoor pizza oven to 400–425°F (205–220°C).
In a large bowl, combine the peaches, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, vanilla, lemon juice, and salt. Toss until evenly coated.
Pour the peach mixture into a 10–12 inch cast iron skillet.
In another bowl, mix together the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Evenly sprinkle the topping over the peaches without pressing it down.
Place the skillet into the pizza oven and bake for 25–30 minutes, rotating the skillet halfway through for even cooking.
Bake until the topping is golden brown and crisp and the peach filling is bubbling around the edges.
Let the crisp rest for 10 minutes before serving.
Serve warm with vanilla ice cream or freshly whipped cream.
