- Preheat your outdoor pizza oven to 400–425°F (205–220°C).
- In a large bowl, combine the peaches, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, vanilla, lemon juice, and salt. Toss until evenly coated.
- Pour the peach mixture into a 10–12 inch cast iron skillet.
- In another bowl, mix together the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Evenly sprinkle the topping over the peaches without pressing it down.
- Place the skillet into the pizza oven and bake for 25–30 minutes, rotating the skillet halfway through for even cooking.
- Bake until the topping is golden brown and crisp and the peach filling is bubbling around the edges.
- Let the crisp rest for 10 minutes before serving.
- Serve warm with vanilla ice cream or freshly whipped cream.
