- Preheat the oven to 350°F (175°C). Lightly butter a 9-inch baking dish or six oven-safe crème brûlée dishes.
- Place the bread cubes in the prepared baking dish. Sprinkle the raisins over the bread, if using.
- In a large bowl, whisk together the milk, cream, eggs, brown sugar, granulated sugar, melted butter, vanilla, cinnamon, nutmeg and salt.
- Pour the custard mixture evenly over the bread. Gently press the bread into the liquid so every piece is moistened.
- Allow the mixture to rest for 20–30 minutes, pressing the bread down once or twice as it absorbs the custard.
- Sprinkle the top with the coarse or brown sugar.
- Bake a large bread pudding for 40–45 minutes, or individual dishes for approximately 25–30 minutes. The edges should be golden and the centre should be set but still slightly soft.
- Allow the bread pudding to cool for 10 minutes before serving.
- Dust with powdered sugar or drizzle with warm caramel sauce, if desired. Serve warm.
