- 1 1/2 Cups Warm Milk - Washed
- 1/2 Cup Warm Water
- 1/2 Tsp Baking Soda

- 1 Tbsp Honey

- In a large mixing bowl, whisk together the flour, sugar, salt and instant yeast.
- Gradually pour in the warm milk, whisking until you have a smooth, thick batter.
- Cover the bowl with a clean kitchen towel and leave in a warm place for 45–60 minutes, or until the batter is bubbly and slightly risen.
- Stir the baking soda into the warm water until dissolved. Pour it into the batter and whisk until well combined.
- Allow the batter to rest for another 10–15 minutes. It should be pourable but thicker than pancake batter.
- Lightly grease a skillet or griddle along with several 3–4-inch metal crumpet rings. Heat over low to medium-low heat.
- Place the rings in the skillet and pour enough batter into each ring to create a layer about ½-inch thick.
- Cook slowly for 6–9 minutes. Small holes will begin forming across the surface. Continue cooking until the tops are almost completely set.
- Carefully remove the rings, flip the crumpets and cook for another 30–60 seconds, just until lightly golden.
- Serve the crumpets warm with plenty of butter and a generous drizzle of honey, allowing it to melt down into all those delicious little holes.
