- Combine the warm water, honey, and yeast. Let sit for 5 minutes.
- Add the egg and oil and whisk together.
- Mix in the flour and salt until a dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Cover and let rise for about 1 hour, or until doubled.
- Divide the dough into 10 equal pieces.
- Roll each piece into a rope about 10 inches long.
- Wrap around your hand, overlap the ends by about an inch, and roll gently on the counter to seal into a ring.
- Place on a parchment-lined baking sheet and let rest for 15–20 minutes.
- Preheat oven to 450°F (230°C).
- Bring the water and honey to a gentle boil.
- Boil each bagel for 30–45 seconds per side.
- Remove with a slotted spoon and drain briefly.
- While still damp, dip one side into sesame seeds or poppy seeds until generously coated.
- Arrange bagels on a parchment-lined baking sheet. (For the most authentic texture, bake on a preheated pizza stone if you have one.)
- Bake for 18–22 minutes, turning the pan halfway through, until deeply golden brown.
- Transfer to a wire rack and cool for at least 15 minutes before slicing.
