- Transfer to a bowl and stir in the eggs.
- Add the flour, baking powder, salt, pepper, garlic powder, and cinnamon (if using). Mix until combined.
- Heat about ¼ inch of oil in a large skillet over medium-high heat.
- Scoop about ¼ cup of the mixture for each latke, flattening gently with a spatula.
- Fry for 3–4 minutes per side until deeply golden and crispy.
- Drain on a paper towel-lined plate and sprinkle with a little extra salt while hot.
