- Preheat the oven to 350°F (175°C) and line or grease a 12-cup muffin tin
- In a large bowl, whisk together the Greek yogurt, eggs, honey, and vanilla.
- Stir in the oat flour, protein powder, baking powder, baking soda, and salt until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes in the pan before transferring to a wire rack.
