- 2 Tbsp Cilantro leaf - Chopped
- 1 Tsp Ginger - Grated
- 1 Clove Garlic - Minced
- 2-4 Tbsp Water
- Oil - For Frying

- Place the sliced onions in a large bowl. Sprinkle with the salt and massage for 2–3 minutes until they begin to soften and release moisture. Let sit for 10 minutes.
- Add the chickpea flour, rice flour, baking powder, coriander, cumin, turmeric, paprika, cayenne, black pepper, green chili, cilantro, ginger, and garlic.
- Toss everything together until the onions are evenly coated. Add just enough cold water, 1 tablespoon at a time, to create a thick batter that clings to the onions without becoming runny.
- Heat 2–3 inches of oil in a deep pot to 350°F (175°C).
- Scoop small loose handfuls of the onion mixture and carefully drop them into the hot oil. Avoid packing them too tightly so the edges become extra crispy.
- Fry for 3–4 minutes, turning occasionally, until deep golden brown and crisp.
- Remove with a slotted spoon and drain on a wire rack or paper towel.
- Serve immediately with mint yogurt sauce, mint chutney, or tamarind chutney and fresh lemon wedges.
