- 1/2 Cup Sauterne
- 3 Tbsp Onion - Chopped
- 1 - Butter (or Margarine)
- 2 Cups Crumbled Corn Bread
- 1/2 Tsp Salt
- 1/8 Tsp Black Pepper
- 1/8 Tsp Poultry Seasoning
- 2 - Egg - Beaten
- 3/4 Cup Pecan - Chopped
- 4 - Cornish Hen

- Soak raisins in sauterne overnight.
- Saute onion in 1/3 cup butter until golden.
- Combine onion, corn bread, salt, pepper, poultry seasoning, eggs and pecans in large bowl; mix well.
- Stir in raisins and sauterne.
- Stuff hens lightly, topping dressing with 1 teaspoon butter under breast.
- Arrange hens on rack in shallow roasting pan.
- Bake at 350 degrees for 1 hour; baste with additional butter every 15 minutes.
- Serve with wild rice, if desired.
