- 1 - Salt - To Taste
- 1 Cup All-Purpose Flour
- 1 Tsp Black Pepper
- 1 - Garlic Salt
- 1 - Monosodium Glutamate
- 1 - Egg - Beaten
- 3 Cups Salad Oil
- 1/2 Cup Butter - Melted
- 1 Tsp Cornstarch
- 1 Tsp Lemon Rind - Grated
- 1/4 Cup Lemon Juice
- 1/3 Cup Pineapple Syrup
- 2 Tbsp Onion - Chopped
- 2 Tsp Soya Sauce

- Arrange hens on rack in Dutch oven or heavy saucepan.
- Add milk; cover tightly.
- Steam over low heat for 30 minutes; remove from heat.
- Drain well; cool.
- Sprinkle hens with salt.
- Combine flour with 1 teaspoon salt, pepper, 1 teaspoon garlic salt and 1 teaspoon monosodium glutamate; blend well.
- Roll hens in egg; coat with flour mixture.
- Heat oil in heavy saucepan or deep fat fryer to 300 degrees.
- Brown hens slightly in oil; drain.
- Arrange on platter; keep warm.
- Combine butter with cornstarch in saucepan; stir in lemon rind, lemon juice, pineapple syrup, chopped onion, soy sauce, 1/4 teaspoon monosodium glutamate and 1 teaspoon garlic salt.
- Simmer for 5 minutes, stirring constantly.
- Serve with hens.
