- 6 Oz Sharp Cheddar Cheese
- 8 Oz Cream Cheese
- 1 Tbsp Butter (or Margarine)
- 1 Tbsp All-Purpose Flour
- 1 1/3 Cups Milk
- 4 Oz Pimentos
- 1 Large Onion - Sliced
- 1 Medium Green Pepper - Diced
- 1 Tbsp Dry Parsley
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
- 3 Cups Chicken - Cooked, Chopped
- 3/4 Cup Potato Chip - Crushed
- 1 - Parmesan Cheese
- 1 - Paprika

- Cut Cheddar cheese in small chunks.
- Allow cream cheese to soften at room temperature.
- Melt butter in saucepan; stir in flour to make a paste.
- Add 1 cup milk slowly.
- Add Cheddar cheese, stirring occasionally until cheese is melted.
- Combine remaining milk and cream cheese in deep bowl; cream with electric mixer.
- Add to cheese sauce.
- Cut pimentos in long thin strips.
- Add onion, green pepper, pimentos, parsley, salt, pepper and chicken to cheese sauce; mix well.
- Pour mixture into casserole.
- Sprinkle potato chips over top; shake Parmesan cheese and paprika lightly over chips.
- Dot with additional butter; cover.
- Bake at 350 degrees for 1 hour.
