- 1/2 Lb Ham - Sliced
- 1 - Butter
- 1 Tsp Salt
- 1/4 Tsp Black Pepper
- 1/4 Cup All-Purpose Flour
- 1 Cup Fine Bread Crumbs
- 1 - Salad Oil
- 11 Oz Mandarin Oranges
- 1 Lb Pear Halves
- 20 Oz Pineapple Chunks
- 1/4 Cup Cornstarch
- 1 Tbsp Soya Sauce
- 4 1/2 Oz Maraschino Cherries
- 1/4 Tsp Marjoram
- 1/4 Tsp Rosemary
- 1/4 Tsp Thyme
- 1/2 Tsp Onion Flakes
- 1 Small Bay Leaf
- 1 Cup Uncooked Rice
- 1/4 Cup Slivered Almonds
- 1/2 Cup Chow Mein Noodle

- Bone, skin and flatten chicken breasts.
- Split breasts; wrap each half around folded ham slice.
- Melt 1/2 cup butter in small saucepan; dip chicken rolls in butter.
- Combine salt, pepper, flour and crumbs; coat chicken well with crumb mixture.
- Brown chicken in small amount of oil in skillet until crisp; transfer to rack in broiler pan.
- Bake at 325 degrees for 20 minutes or until tender.
- Drain oranges; drain pears and pineapple, reserving juices.
- Slice pears into halves lengthwise.
- Combine reserved juices in large saucepan; stir in cornstarch.
- Cook over medium heat, stirring constantly, until clear and thickened.
- Stir in soy sauce and 2 tablespoons butter.
- Drain cherries.
- Fold fruits into sauce gently.
- Add marjoram, rosemary, thyme, onion flakes, remaining salt, 1 tablespoon butter and bay leaf to 2 1/2 cups water; bring to a boil.
- Add rice gradually; reduce heat.
- Simmer, covered, until rice is tender and fluffy; remove bay leaf.
- Arrange rice on large heated platter; place chicken over rice.
- Spoon fruit sauce over all.
- Garnish with almonds and chow mein noodles.
Serve immediately.
