- Spread about ¼ of the cheesecake mixture over one half of each tortilla, leaving a small border around the edge.

- Fold each tortilla in half and gently press it closed.
- Melt a little butter in a skillet over medium-low heat.
- Cook each quesadilla for 2–3 minutes per side, until golden and crisp and the cheesecake filling is warm.
