- 1 Lb Ground Beef
- 1 Tbsp Olive Oil
- 1 Medium Onion - Diced
- 2 Cloves Garlic - Minced
- 1 Small Cabbage - Chopped
- 2 Carrot - Diced
- 1 Can Diced Tomatoes
- 1 Can Tomato Sauce
- 6 Cups Beef Broth (or Chicken Broth)
- 3/4 Cup Long-Grain Rice
- 1 Tsp Mild Smoked Spanish Paprika
- 1 Tsp Italian Seasoning
- 1 Bay Leaf
- 1 Tsp Salt and Pepper - To Taste
- 1 Tsp Parsley (or Dry Parsley) - Chopped

- In a large soup pot, brown the ground beef over medium heat. Drain excess fat if needed.
- Add the onion and cook for 4–5 minutes until softened. Stir in the garlic for 30 seconds.
- Add the chopped cabbage, carrots, diced tomatoes, tomato sauce, broth, paprika, Italian seasoning, and bay leaf.
- Bring to a boil, then stir in the rice.
- Reduce heat and simmer uncovered for 25–30 minutes, until the rice is tender and the cabbage is soft.
- Remove the bay leaf. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve with crusty bread if desired.
