- 5 Lbs Duck With Giblets
- 1 - Salt - To Taste
- 1 - Black Pepper - To Taste
- 3/4 Cup Butter
- 1 Large Onion - Sliced
- 1 - Carrot - Chopped
- 2 Slices Bacon - Diced
- 1 Large Orange - Peeled And Quartered
- 1 Tsp Garlic Powder
- 1 - Bay Leaf
- 1 Cup Red Cooking Wine
- 4 Tbsp All-Purpose Flour

- Cook giblets in 2 cups water until tender; remove giblets from stock.
- Cut duck into serving pieces; rub with salt and pepper.
- Brown each piece evenly in butter in skillet.
- Remove from skillet; place in casserole.
- Brown onion, carrot and bacon in butter remaining in skillet.
- Add orange, garlic powder, bay leaf, wine and 1 1/2 cup stock; bring to boiling point.
- Pour over duck; cover.
- Bake at 350 degrees for 2 hours and 30 minutes or until tender; remove duck to serving platter.
- Strain casserole juices; pour into saucepan.
- Stir in flour; cook, stirring, until slightly thickened.
- Spoon small amount of sauce over duck.
- Serve remaining sauce with duck.
- Garnish platter with parsley.
