- 10 to 12 Oz Spinach
- 1 Clove Garlic - Peeled or Slivered
- 1/3 Cup Olive Oil (or Salad Dressing)
- 1/4 Cup Red Wine Vinegar
- 1/4 Tsp Salt
- 1 Dash Black Pepper
- 2 - Hard Boiled Egg - Chopped
- 3 Slices Bacon - Fried And Crumbled

- Wash spinach; remove the stems and dry the leaves.
- Tear into bite-size pieces (about 10 cups) and refrigerate.
- Let garlic stand in oil 1 hour, then remove garlic.
- Just before serving, heat oil, vinegar, salt and pepper in a chafing dish or small saucepan, stirring occasionally.
- Toss the hot dressing with the spinach until leaves are well coated.
- Sprinkle chopped eggs and bacon over the salad and toss lightly.
