- 1/2 Cup Sun Dried Tomato - Chopped
- 2 Cans Chickpea - Drained And Rinsed
- 1 Tsp Italian Seasoning
- 1/2 Tsp Mild Smoked Spanish Paprika
- 1/4 Tsp Red Pepper Flakes - To Taste
- 3/4 Cup Vegetable Stock
- 3/4 Cup Heavy Cream
- 1/2 Cup Parmesan Cheese - Grated
- 2 Cups Spinach
- 1/4 Cup Basil - Chopped

- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and sun-dried tomatoes and cook for about 1 minute until fragrant.
- Stir in the chickpeas, Italian seasoning, paprika, red pepper flakes, salt and black pepper.
- Pour in the vegetable broth and simmer for 3–4 minutes.
- Reduce the heat and stir in the heavy cream and Parmesan.
- Simmer gently for 5–7 minutes, stirring occasionally, until the sauce becomes rich and creamy.
- Add the spinach and stir until just wilted.
- Stir in the fresh basil and taste, adjusting the seasoning if needed.
- Serve hot with crusty bread, pasta, rice or orzo, spooning plenty of the creamy sun-dried tomato sauce over the top.
