- If using wooden skewers, soak them in water for 30 minutes.
- Toss the chicken with olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper.
- Dip each chicken piece in the beaten egg, then coat with a mixture of panko and Parmesan.
- Thread the chicken onto skewers, leaving a little space between pieces. Cook:
- Grill: Medium heat for 10–12 minutes, turning often.
- Oven: Bake at 425°F (220°C) for 18–20 minutes.
- Air Fryer: 390°F (200°C) for 10–12 minutes
- During the last 2–3 minutes of cooking, spoon marinara over each skewer and top with mozzarella.
- Continue cooking until the cheese is melted and the chicken reaches 165°F (74°C).
- Sprinkle with fresh basil and extra Parmesan before serving.
