- 8 Slices Bacon

- 1 Cup Mozzarella Cheese - Shredded
- 1/2 Cup Cheddar Cheese - Shredded

- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Mild Smoked Spanish Paprika
- 1 Tsp Salt and Pepper
- 1 Tbsp Olive Oil

- Butterfly each chicken breast, being careful not to cut all the way through. Open like a book.
- In a bowl, mix together the cream cheese, mozzarella, cheddar, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Divide the filling evenly among the chicken breasts and spread over one side.
- Fold each chicken breast closed and wrap tightly with 2 slices of bacon, tucking the ends underneath.
- Lightly oil the Blackstone and preheat one side to medium-low (about 325–350°F).
- Place the chicken seam-side down on the cooler side of the griddle. Cook for 7–8 minutes until the bacon begins to crisp.
- Rotate every 5–6 minutes, cooking all sides until the bacon is browned and the chicken reaches an internal temperature of 165°F (74°C), about 25–35 minutes total.
- If the bacon needs extra crisping, move the chicken briefly to a hotter section of the griddle for 1–2 minutes per side.
- Rest for 5 minutes before slicing and serving.
