- Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with cooking spray or place silicone muffin cups in each compartment.
- In a large bowl, whisk the eggs until smooth.
- Stir in the cottage cheese, ham, cheddar cheese, bell peppers, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Evenly divide the mixture among the muffin cups, filling each about ¾ full.
- Bake for 22–25 minutes, or until the egg cups are puffed, lightly golden, and the centers are set.
- Let cool for 5 minutes before removing from the muffin tin.
- Serve warm or allow to cool completely for meal prep.
