- Heat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, garlic powder, paprika, onion powder, salt and pepper.
- Spread the potatoes over two baking sheets so they aren't crowded. Roast for 25–30 minutes, turning halfway through, until browned and crispy.
- While the potatoes cook, brown the ground beef and diced onion in a large skillet or on the Blackstone over medium-high heat. Break the beef into small crumbles as it cooks.
- Drain excess grease if necessary. Season the beef with garlic powder, onion powder, Worcestershire sauce, salt and pepper. Cook for another 2–3 minutes.
- Sprinkle the cheddar over the hot beef and allow it to melt slightly.
- Whisk together the mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder and smoked paprika to make the burger sauce.
- Divide the crispy potatoes among 8 bowls. Add lettuce, cheeseburger beef, tomatoes, pickles and red onion.
- Drizzle generously with burger sauce and finish with a little extra cheddar.
