- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Mix the almond flour, coconut flour, baking powder, garlic powder, and salt in a bowl.
- In a separate bowl, whisk the eggs. Stir in the mozzarella, cream cheese, and melted butter.
- Combine the wet and dry ingredients until a soft dough forms.
- Divide the dough into 6 equal portions, shape into biscuits about 3 inches wide, and place on the baking sheet.
- Bake for 15–18 minutes, until lightly golden. Cool for 5 minutes.
- While the biscuits bake, cook the sausage patties in a skillet over medium heat until browned and fully cooked. Remove from the pan.
- Melt the butter in the skillet and cook the eggs. For the best sandwich fit, cook them in egg rings or gently fold them into rounds. Season with salt and pepper.
- Place a slice of cheddar on each hot sausage patty and let it melt.
- Slice each biscuit in half. Layer with a sausage patty, egg, and melted cheese, then top with the remaining biscuit half.
