- 1 Cup Rice
- 4 Oz Pimentos - Chopped
- 1 Cup Celery - Diced
- 1/2 Cup Onion - Chopped
- 2 Cups Turkey - Cooked, Cubed
- 1/2 Cup Blanched Almonds - Chopped
- 1 3/4 to 2 Cup Chicken Broth
- 1 1/2 Tbsp All-Purpose Flour
- 1 - Salt - To Taste
- 1 - Black Pepper - To Taste

- Cook rice according to package directions; drain.
- Rinse with cold water.
- Combine rice and pimento.
- Spoon 1/3 of the rice mixture into greased 2-quart casserole.
- Saute celery and onion until tender.
- Arrange layers of turkey, onion, celery and 1/2 of the almonds over rice mixture in casserole.
- Spoon remaining rice mixture over layers.
- Combine broth, flour, and seasonings, mixing well; pour over rice mixture.
- Sprinkle with remaining almonds.
- Bake at 375 degrees for about 40 minutes.
- May serve with medium white sauce if desired.
