- 2 Tbsp Basil - Chopped
- 1 Tbsp Parsley - Chopped
- 1 Tsp Salt and Pepper
- 1 Cup Marinara Sauce

- Preheat the oven to 350°F (175°C).
- Heat 1 tablespoon of the olive oil in a medium sauté pan over medium heat. Add the diced red pepper, onion, and garlic. Sauté until just softened. Transfer to a plate and let cool.
- Once the vegetables have cooled, combine them with the ground beef, eggs, breadcrumbs, Parmesan cheese, Worcestershire sauce, balsamic vinegar, basil, parsley, salt, pepper, and the remaining 1 tablespoon olive oil. Mix until just combined.
- Pack the meat mixture into a lightly oiled loaf pan. If you don't have a loaf pan, shape it into a loaf on a lightly oiled baking sheet or baking dish.
- Spread the marinara sauce evenly over the top of the meatloaf.
- Bake for 50–60 minutes, or until an instant-read thermometer inserted into the center registers 160°F (71°C).
- Remove from the oven and let rest for 5 minutes before slicing and serving.
