- 1 Large Rice Cake

- 1 Tsp Almond (or Walnuts) - Chopped
- 1 Pinch Salt
- 1/4 Tsp Cinnamon

- In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth.
- Spread the melted chocolate into a thin, even layer over the rice cake.
- Let set in the freezer for 10-15 mins.
- Dollop the peanut butter over the chocolate and gently spread into a thin layer.
- Spread the Greek yogurt evenly over the peanut butter.
- Arrange the banana slices in a single layer over the yogurt.
- Drizzle with honey or maple syrup.
- Sprinkle with the chopped nuts and, if desired, finish with a pinch of flaky sea salt and a light dusting of cinnamon.
- Enjoy immediately.
Optional Variations:
- Replace the banana's with sliced strawberries or raspberries.
- For a higher protein option, mix in 1 tsp of vanilla protein powder with the Greek yogurt.
- Substitute apple slices for the banana and sprinkle with cinnamon.
