- Make the filling: In a small bowl, combine the Greek yogurt, peanut butter, honey and vanilla
- Shape the pops: Spoon the mixture onto a parchment-lined baking sheet into even oval / round mounds.
- Insert a popsicle stick into each mound.
- Freeze for 2-3 hours until completely firm.
- Prepare chocolate coating: Melt chocolate and coconut oil together until smooth.
- Dip the frozen pops in the chocolate coating, working quickly and coat evenly.
- Place the pops back onto the baking sheet
- Add toppings (if using) and place back into freezer.
- Freeze an additional 15-20 minutes for chocolate to set.
