A little skillet finesse turns everyday pork chops into something you'd happily serve to guests. The chops are seared until golden, then rested while a quick pan sauce of sautéed onion, fennel seed, paprika, and dry white wine bubbles up from the browned bits. Spooned over the top, it's an elegant, aromatic supper that comes together in about half an hour.
