All the sparkle of a mojito, none of the rum, this mocktail muddles juicy watermelon with lime and fresh mint before topping it off with something bubbly. It is bright, a little fancy, and refreshing enough to make anyone forget they are skipping the alcohol. Serve it at a summer party or a poolside afternoon and it will disappear as fast as you can pour it.
Ingredients
Ingredients
- 3 Cups Watermelon - Cubed
- 8-10 Leaf Mint
- 1 Small Lime - Wedged
- 2-3 Tbsp Honey (or Maple Syrup)
- 1 Cup Sparkling Water (or Club Soda)
- 1 Cup Ice Cube
- 1 Small Watermelon - Wedged or Garnish
Directions
Directions
- Blend the watermelon until smooth, then strain through a fine mesh sieve if you prefer a smoother drink.
- Divide the mint leaves and lime wedges between two glasses. Gently muddle to release the mint oils and lime juice.
- Fill each glass with ice.
- Pour the fresh watermelon juice over the ice until the glass is about three-quarters full.
- Stir in honey or simple syrup if you’d like a sweeter drink.
- Top with sparkling water or club soda.
- Stir gently and garnish with a watermelon wedge, a sprig of fresh mint, and an extra lime slice.
