- 1/3 Cup Green Onions - Chopped
- 1/3 Cup Wild Rice
- 2/3 Cup Long-Grain Rice
- 2/3 Cup Butter
- 4 Cups Water
- 4 Cubes Chicken Bouillon
- 1 1/2 Tbsp Lemon Juice
- 1 1/2 Tsp Salt
- 8 Oz Mushrooms - Chopped
- 4 - Cornish Hen
- 1 - Butter - Melted

Directions
- Place almonds, onions, rice and butter in 4-quart saucepan; cook for 10 minutes, stirring frequently.
- Add water, bouillon cubes, lemon juice and salt; cover.
- Simmer for 25 minutes or until rice is tender and liquid is absorbed.
- Stir in mushrooms.
- Place in cavities of Cornish hens; place hens in roasting pan.
- Brush with melted butter.
- Bake, uncovered, at 400 degrees for 30 minutes.
- Cover; bake for 45 minutes to 1 hour or until golden brown and tender.
