- 1 Cup Prepared Biscuit Mix
- 1 - Salt - To Taste
- 1 - Ginger - Ground
- 1 - Cloves - Ground
- 1 - Egg - Beaten
- 1 - Cooking Oil
- 6 Slices Pinapple
- 1/4 Cup Pineapple Juice
- 1/2 Cup Brown Sugar - Firmly Packed
- 1 Tbsp Butter
- 1 Stick Cinnamon
- 6 Slices Lime
- 3 - Cherry - Halved

- Remove skin from chicken breasts.
- Combine biscuit mix, salt, ginger and cloves.
- Dip chicken in egg, then roll in biscuit mix mixture.
- Brown in hot oil.
- Place in baking dish.
- Place 1 slice pineapple on each breast.
- Combine pineapple juice, brown sugar, ginger, cloves, butter and stick cinnamon in a small saucepan and simmer for at least 10 minutes.
- Bake chicken at 375 degrees for about 40 minutes, basting at least 2 times with sauce.
- Place a thin slice of lime and cherry on pineapple 5 minutes before baking is completed.
- May be prepared ahead of time and frozen.
