- 2 Lbs Chuck (or Sirloin Roast)
- 1 Tbsp Olive Oil
- 1 Tsp Sea Salt
- 1 Tsp Black Pepper
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Crumbled Dried Thyme
- 1 Large Onion - Thinly Sliced
- 3 Cloves Garlic - Minced
- 3 Cups Beef Broth
- 1 Tbsp Worcestershire Sauce
- 1 Tsp Soya Sauce
- 1 Tsp Dijon Mustard
- 4-6 French Rolls
- 8-12 Slice Provolone Cheese
- 2 Tbsp Butter
- Parsley

- Pat the beef dry and season all over with salt, pepper, garlic powder, onion powder and thyme.
- Heat olive oil in a large skillet over medium-high heat. Sear the beef for about 3–4 minutes per side until nicely browned.
- Place the sliced onion and garlic in the bottom of a slow cooker and set the beef on top.
- Pour in the beef broth, Worcestershire sauce, soy sauce and Dijon mustard.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
- Remove the beef and let it rest for about 10 minutes. Thinly slice it across the grain or gently pull it apart, depending on how tender it is.
- Strain the cooking liquid and skim off excess fat. Taste and adjust the seasoning. This becomes your au jus.
- Split the French rolls and lightly butter the cut sides. Toast under the broiler until just golden.
- Pile each roll generously with warm beef and top with 2 slices of provolone.
- Return the sandwiches to the broiler for 1–2 minutes, just until the cheese is melted and bubbling.
- Sprinkle with a little parsley if desired and serve immediately with individual bowls of warm au jus for dipping.
