- 3 Tbsp Olive Oil (or Salad Oil)
- 2 Tbsp Butter
- 4 Lbs Chicken - Disjointed
- 1 1/2 Cups Onion - Sliced
- 1 Clove Garlic - Pressed
- 2 Tbsp Parsley - Chopped
- 1 Lb Tomato
- 1 1/2 Tsp Salt
- 1/2 Tsp Dried Basil Leaves
- 1/4 Tsp Black Pepper

- Heat oil and butter in Dutch oven; add chickens, several pieces at a time.
- Brown well on all sides; remove from Dutch oven.
- Set aside.
- Add onion and garlic to Dutch oven; saute for about 5 minutes or until golden brown.
- Add parsley, tomatoes, salt, basil and pepper; mix well, mashing tomatoes with fork.
- Bring to boiling point; reduce heat.
- Simmer, uncovered, for 20 minutes.
- Add chicken; simmer, covered, for 45 to 50 minutes or until chicken is tender.
May be served with buttered noodles, spaghetti or baked potatoes.
