- 6 Cups Bread Crumbs
- 3 1/2 Cups Milk
- 6 - Egg
- 1 1/2 Cups All-Purpose Flour

- Cook hen in 3 to 4 cups boiling water until tender.
- Remove skin; grind with bread crumbs.
- Bone hen; cut into bite-sized pieces.
- Combine 3 1/2 cups broth and milk in saucepan; heat.
- Separate 2 eggs; beat 4 eggs and 2 egg whites until light.
- Combine eggs and flour in bowl; add small amount of hot liquid, stirring constantly.
- Add remaining liquid, stirring until smooth.
- Cool.
- Combine remaining egg yolks and ground bread crumb mixture.
- Place half the hen in baking dish; cover with half the custard mixture.
- Add hen in layer; cover with remaining custard mixture.
- Top with remaining crumb mixture.
- Bake at 350 degrees for 1 hour or until brown and bubbly.
