- Add drained and rinsed Chickpeas to a large mixing bowl.
- Stir in cucumber, celery, tomatoes, pepper, onion, carrots, parsley and seeds.
- Whisk together all dressing ingredients.
- Pour dressing (Lemon Herb Dressing) over the salad and toss until well coated.
- Fold in feta cheese if using.
- Chill for 30 minutes before serving for the best flavor.
