Rotini mingles with pepperoni, mozzarella, cherry tomatoes, olives, and crunchy veggies, all coated in a zesty Italian dressing spiked with garlic and red pepper flakes. It only gets better as it sits, which makes it a reliable star for cookouts, packed lunches, and lazy summer dinners.

Ingredients

12 Oz Rotini
1 Cup Pepperoni - Sliced
1 Cup Mozzarella Cheese - Cubed
1 Cup Cherry Tomato - Halved
1 Cup Cucumber - Diced
1 Green Bell Peppers - Diced
1/2 Cup Black Olive - Sliced
1/4 Cup Red Onion - Finely Chopped
1/4 Cup Parmesan Cheese - Grated
1 Tbsp Basil - Chopped
3/4 Cup Italian Dressing
2 Tbsp Mayonnaise
1 Tsp Italian Seasoning
1/2 Tsp Garlic Powder
1/4 Tsp Red Pepper Flakes - Crushed
1 Tsp Salt And Pepper - To Taste

Directions

Cook the rotini in salted water until al dente. Drain and rinse under cold water.
Whisk together the Italian dressing, mayonnaise, Italian seasoning, garlic powder, crushed red pepper flakes, salt, and pepper.
In a large bowl, combine the cooled pasta, pepperoni, mozzarella, tomatoes, cucumber, green pepper, olives, red onion, Parmesan, and basil.
Pour the dressing over the salad and toss until everything is evenly coated.
Refrigerate for at least 1 hour before serving to let the flavors meld.
Toss again before serving. If needed, add a splash of Italian dressing to freshen it up.
