- 28 Oz Cornish Hen
- 1 qt Boiling Water
- 1 1/4 Tsp Salt
- 3/4 Cup Onion - Finely Chopped
- 1/2 Cup Celery - Finely Chopped
- 2 Cups Soft Bread Crumbs
- 1 - Egg
- 1/2 Tsp Sage
- 1/2 Cup Butter (or Margarine)
- 1/2 Tsp Rosemary
- 1/8 Tsp Garlic Powder

- Place giblets in boiling water with 1 teaspoon salt; simmer, uncovered, for 1 hour or until tender.
- Chop giblets; reserve broth.
- Mix 1/4 cup onions, celery, bread crumbs, egg, 1/2 cup reserved broth, sage and remaining salt.
- Add giblets; mix.
- Rinse Cornish hens; stuff cavities with dressing.
- Tie legs together with string or use skewers.
- Melt butter in saucepan; add rosemary and garlic powder.
- Place Cornish hens in small roasting pan; pour onion mixture over hens.
- Cover.
- Bake at 375 degrees for 45 minutes.
- Uncover; bake for 15 minutes longer, basting with pan drippings frequently.
