- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine the sugar, cinnamon (if using) and salt.
- Sprinkle half of the sugar mixture evenly over your work surface.
- Place the puff pastry on top and sprinkle with the remaining sugar mixture.
- Gently roll the pastry into approximately a 10 × 10-inch square, pressing the sugar into the dough as you roll.
- Fold both opposite sides of the pastry inward until they meet in the centre.
- Fold those same sides inward once more so they meet in the centre again.
- Fold one half over the other, like closing a book, to form a compact pastry log.
- Wrap and refrigerate for 20–30 minutes, until firm.
- Cut the chilled log into ½-inch-thick slices.
- Arrange cut-side up on the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 8–10 minutes, carefully flip each palmier, then bake another 5–7 minutes until deeply golden, crisp and caramelized.
- Transfer to a wire rack and cool completely. The palmiers will become crispier as they cool.
