- 1/2 Cup Butter (or Margarine)
- 2 - Egg
- 1/2 Cup Milk
- 1 1/2 Cups Flour
- 1 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 Tsp Lemon Zest
- 1 1/2 Cups White Sugar
- 1/3 Cup Lemon Juice

- Cream together butter and 1 cup sugar, add eggs and beat well.
- Add Lemon Juice and Lemon Rind.
- Sift together dry ingredients and add to butter alternately with milk.
- Pour into a buttered loaf pan.
- Bake at 350 F for 1 hour.
- While cake is baking, squeeze the juice from lemon and add 1/4 cup sugar (glaze).
- Take cake from oven and allow to stand 5 minutes.
- Remove loaf from pan and place right side up on large square of tin foil.
- Pour glaze over loaf, seal and store.
