- Stir in the flour, baking powder, sugar (if using), and salt until just combined. The batter will be thick.
- Heat a lightly greased nonstick skillet over medium heat.
- Scoop about 2 tablespoons of batter per pancake onto the skillet.
- Cook for 2–3 minutes, until bubbles form and the edges look set. Flip and cook another 2–3 minutes until golden brown.
- Serve warm.
