- 1 1/3 Cups Dry Bread Crumbs
- 2/3 Cup Broken Pecan Meats
- 2 - Pheasant
- 2 Tbsp All-Purpose Flour
- 3/4 Tsp Salt
- 1/4 Tsp Black Pepper
- 1/3 Cup Sherry

- Melt half the butter; pour over bread crumbs.
- Add pecans; toss lightly.
- Stuff pheasant and truss.
- Combine flour, salt and pepper; sprinkle lightly over pheasant.
- Melt remaining butter in a heavy skillet.
- Brown pheasant; transfer to roasting pan.
- Add 1 1/2 cups hot water and sherry to browned butter; pour over pheasant.
- Bake, covered, in 350-degree oven for 1 hour, basting every 15 minutes.
- Remove cover; bake for 20 minutes longer or until crisp.
- Thicken pan drippings for gravy, if desired.
