- 3 Cups Rice

- 1/4 Tsp Black Pepper
- 4 - Chicken Breasts
- 8 Slices Processed Cheddar Cheese

Directions
- in a skillet on the stove, cook the sliced zucchini, chopped celery, green pepper and onion in the butter until tender.
- Add cooked rice, sliced olives and seasonings and mix well.
- Place in a 13 x 9 inch baking dish.
- Top with cooked chicken breasts.
- Bake at 350 degrees for 20 minutes.
- Then overlap 2 slices of cheese on each chicken breast.
- Return to oven until cheese melts.
