- 3 Tbsp Butter
- 1/2 - Green Pepper - Sliced
- 1 Stalk Celery - Sliced
- 1 Small Onion - Sliced
- 4 Tbsp All-Purpose Flour
- 1/2 Cup Olives - Chopped
- 2 - Pimentos - Sliced
- 4 Oz Mushrooms - Sliced
- 1 Cup Light Cream
- 1 Tsp Salt
- 1/2 Cup Swiss Cheese - Grated
- 1/2 Cup Slivered Almonds

- Cook chicken breasts in enough water to cover until tender; drain, reserving broth.
- Bone and skin chicken, leaving chicken in large chunks.
- Melt butter in saucepan.
- Add green pepper, celery and onion; cook for several minutes or until vegetables are limp.
- Stir in flour until smooth.
- Add 2 cups reserved chicken broth; cook until bubbly.
- Add olives, pimentos, mushrooms, cream, salt and cheese.
- Cook, stirring constantly, until heated through.
- Arrange chicken in greased casserole.
- Pour sauce over chicken; sprinkle with almonds.
- Bake at 350 degrees for 30 minutes.
