- 5 Lbs Hen
- 1 - Salt - To Taste
- 1 - Black Pepper - To Taste
- 1 Bunch Celery
- 3 - Green Bell Peppers
- 3 Large Onion
- 16 Oz Chinese Vegetables
- 17 Oz Bamboo Sprouts
- 17 Oz Water Chestnuts
- 1 Can Red Pimentos - Chopped
- 1 Bottle Soya Sauce
- 1 - Rice - Cooked
- 1 Can Chinese Noodles

Directions
- Cook hen in boiling water until tender.
- Remove hen from stock.
- Remove chicken from bones.
- Make thick gravy of stock; season with salt and pepper.
- Cut celery, bell peppers and onions in large pieces.
- Cook in 1/2 cup water till tender-crisp.
- Do not drain.
- Drain Chinese vegetables, bamboo sprouts and water chestnuts; slice water chestnuts.
- Add chicken, Chinese vegetables, bamboo sprouts, water chestnuts, celery mixture and pimentos to gravy; add soy sauce.
- Serve over rice; sprinkle Chinese noodles on top.
- Better made day before served; freezes well.
