- 10 1/2 Oz Beef Broth
- 3/4 Cup Cranberry Juice Cocktail
- 1/4 Cup Butter (or Margarine)
- 1 - Salt - To Taste
- 2 Medium Orange - Thinly Sliced
- 1 Tbsp Cornstarch
- 1 Tbsp Water
- 2 Tbsp White Sugar
- 1 Tbsp Vinegar

- Combine chicken neck, giblets and beef broth in medium saucepan.
- Simmer, covered, for 1 hour.
- Strain broth; add cranberry juice cocktail.
- Boil until liquid is reduced to 1 cup.
- Set aside.
- Brown remaining chicken pieces in half in butter in skillet.
- Place in 11 3/4 x 7 1/2 x 1 3/4-inch baking dish.
- Season chicken pieces with salt.
- Bake in 350-degree oven for 25 minutes.
- Add orange slices to chicken.
- Bake for 30 to 35 minutes longer.
- Blend cornstarch and water; stir into cranberry mixture.
- Cook, stirring, until sauce is thickened and bubbly.
- Melt remaining butter in small saucepan.
- Cook, stirring, until mixture bubbles and is brown.
- Add vinegar.
- Stir sugar mixture into sauce; heat through.
- Pour over chicken.
