Fruit Coffee Cake

1. Preheat oven to 350F(175C)
2. Cream butter and sugar in a large bowl using a wooden spoon.
3. Blend in eggs one at ta time and stir in sour cream and vanilla.
4. Add baking soda and flour 1 cup at a time and mix well.
5. Stir in 2 cups of fruit.
6. Transfer to baking pan and top with crumble.
7. Bake in a 9x13 pan for 35 to 40 minutes or until a knife inserted in the center comes out clean.

This is a very simple recipe and quite versatile. Fresh or frozen fruit can be used but allow a longer cooking time if using frozen fruit.
