Tender spinach leaves, sweet mandarin oranges, and a scattering of sunflower seeds and thin-sliced red onion make a salad that's as pretty as it is refreshing. A drizzle of poppy seed dressing ties the sweet and savory together in every forkful. It's endlessly adaptable to whatever fruit you have on hand, and a welcome splash of color on any table.
