- 10 Oz Spinach
- 11oz Can Mandarin Oranges - Drained
- 1/2 Small Red Onion - Halved or Thinly Sliced
- 2 Tbsp Sunflower Seed - Roasted
- 1 Tsp Dry Mustard
- 3/4 Cup White Sugar
- 1 Tsp Salt
- 1/3 Cup Raspberry Vinegar
- 1 Tbsp Onion - Grated
- 1 Cup Vegetable Oil (or Extra-Virgin Olive Oil)
- 1 1/2 Tsp Poppy Seeds

Directions
- Remove large stems from spinach leaves.
- Tear leaves into bite size pieces.
- Place in large salad bowl, add orange sections, onion & sunflower kernels.
- Toss gently to combine.
- Cover & refrigerate till ready to serve.
- Poppy Seed Dressing: Place all dressing ingredients, except oil & poppy seeds, in a food processor.
- Process 15 seconds.
- With motor running, add oil through feed tube in a slow steady stream.
- Add poppy seeds.
- Turn off & on 2 or 3 times.
- Pour over salad and mix, just before serving.
- GREAT SALAD!
