The eternal tug-of-war between sweet and tart finds perfect balance in these bars. A buttery shortbread crust supports a bright, glossy lemon filling that bakes up smooth and just tangy enough to make you pucker and reach for another. A dusting of icing sugar finishes them off. Cut into squares, they are a sunny addition to any bake sale, brunch, or afternoon tea.
