Bright with lemon and dotted with sweet pimiento, this smooth, dairy-free sauce gets its velvety body from blended potato and a savory lift from brewer's yeast flakes. It thickens on the stove in minutes and sets further as it cools, ready to be reheated whenever you need it. Drape it over steamed vegetables, grains, or baked potatoes for a pop of color and tang.
