- 1/2 Cup Almond Flour
- 1/2 Cup Oat Flour
- 3 Tbsp Butter - Melted
- 1/ Cup Maple Syrup (Sugar Free)
- 1 1/2 Tbsp Lemon Juice - Fresh Squeezed
- 1/2 Cup Cottage Cheese
- 1 Oz Cream Cheese
- 1/2 Tsp Lemon Juice - Fresh Squeezed
- 3 Tbsp White Chocolate Chips
- 1 Tsp Coconut Oil
- 1 Scoop Vanilla Protein Powder

- Line a loaf pan with parchment paper, leaving enough overhang to easily lift out the bars.
- Combine the protein powder, almond flour, oat flour, melted butter, maple syrup and lemon juice. Mix until a thick, soft cookie-dough consistency forms.
- Press the mixture firmly and evenly into the prepared loaf pan. Refrigerate while you make the topping.
- Blend the cottage cheese, cream cheese and lemon juice until completely smooth and creamy.
- Transfer the mixture to a bowl.
- In a separate microwave-safe bowl, gently melt the white chocolate chips with the coconut oil, stirring until smooth.
- Stir the melted chocolate into the cottage-cheese mixture.
- Add the protein powder and stir until you have a thick, creamy frosting. If it’s too loose, add a little additional protein powder or cream cheese.
- Spread the frosting evenly over the chilled cookie layer.
- Freeze for about 20 minutes, or until firm enough to slice cleanly.
- Lift from the pan using the parchment and cut into bars. Keep refrigerated for a softer texture or frozen for a firmer, almost cheesecake-like bar.
